Here is something totally decadent and completely out of this world. It is the combining of my three favorite things, chocolate, bacon and spicy. I originally made these for a friend of mine for his birthday, but I was ill that day and couldn’t make the party
So he never got to taste my entry into his bacon recipe contest. Because they don’t keep very long, I ended up having them, cause it would be a crime to send them to the rubbish bin. I’ll just have to make him another batch when I see him next.
There are quite a few recipes out there for chocolate bacon confections. This is my take on it. I know that cayenne pepper and chocolate marry well, so I tossed some into my chocolate mixture. I thought about tossing some fleur de sel into the mix as well, but I think that would have been overkill seeing as the bacon was probably salty enough. You can cut the bacon strips in half to make more pieces if you like, but they may shrink to nothing seeing as you need to make the bacon really crispy.
As you can see from the picture, I need to work on making the chocolate coat better. There are some “bald” spots where the chocolate did not adhere as well and you can see the bacon coming through.
When I tasted it, it was one of those “I’ve died and gone to heaven” moments. The sweet and salty combined with the gentle kick of the cayenne was sublime in my opinion. My husband was skeptic about this, but he loved it once he tried it. So give this a try if you are a bacon lover. Or make some as a edible Christmas gift or for Christmas brunch this year. I know I definitely will make a mess of the kitchen and make this again to share during the holidays.
Spicy Chocolate Bacon
8 ounces good-quality semi-sweet chocolate (I used Baker’s)
1 package of bacon – smoked is good, maple cured is even better
Cayenne pepper to taste
Method
- Cook the bacon according instructions on the package until crisp. I put it in the oven to make it go faster.
- Put the bacon on paper towels to absorb all the excess oil and allow to cool.
- In the meantime, place the chocolate in a microwave safe bowl and melt the chocolate – about 2 minutes on high.
- Add cayenne pepper to the chocolate and stir. Add a little at a time and taste as you go until you get the kick you want.
- Dip the bacon strips into the chocolate. Shake off the excess and place on a wax paper lined cookie sheet.
- Place in refrigerator and allow the chocolate to set. It will keep a few days in the fridge in an airtight container.




This is the most sinful thing ever, I still remember the day I ate chocolate bacon… it just screams cholesterol!

Remind me why I haven’t tried chocolate and bacon yet? When the trend was in its very beginnings, I balked at the idea, but the more I think about it, the tastier it sounds… I love the inclusion of cayenne pepper! Espelette chili might be good too…
