In my quest to cut down on carbs, I decided to try my hand at making some no flour baked goods. For my first experiment I went with flourless peanut butter cookies because my hubby likes those.
The results tasted good, but were a little crumbly – probably due to the lack of flour. Making them were a little messy because I first attempted to shape them using my hands. Way too sticky! I ended up shaping the balls using two spoons.
No Flour Peanut Butter Cookies
1 cup smooth peanut butter
1/2 cup sugar
1 egg
1 tbsp vanilla
Method:
- Preheat oven to 325 F.
- Mix all the ingredients in a bowl, until well combined.
- Using your hands or two spoons form 12 balls and place on an ungreased non-stick cookie sheet.
- Using a fork, press down on each ball to flatten the cookie.
- Bake for 15 to 20 minutes. Remove from oven and allow to cool before moving them off the cookie sheet.



I believe this is the kraft peanut butter cookie recipe. I’ve made them before…i’m not a fan. I find that it sticks to my teeth. Don’t eat too many of these…it’s just sugar.
@Joey – It might be, but that is not where I found the recipe. I modified it by adding the vanilla cause I wanted to tone down the peanut butter. I personally can eat one or maybe just half. My husband on the other hand can polish off an entire plate. It is really something for a PB lover.
I’ve used the recipe on epicurious “mom-mom fritch’s peanut butter cookies” with success. It calls for 1 cup sugar so maybe that’s what give it more form. I use half white, half brown sugar.
My recipe calls for brown sugar and it seems to be hit or miss s whether I can shape them by hand. Mine have the Hershey kiss implanted and my boys (4) and hubbie love them.
I’m really intrigued by the idea of a no flour cookie. I’m gonna have to give it a try. Thanks for sharing!
Have you tried peanut flour?They make a good cookie, you can use any flour based recipe and substitute at least 30% or more for the flour in the recipe. They taste really good.
