I’ve always loved fish cakes. However, the fish cakes I am accustomed to are the kind found in the Carribean. This recipe does not include any of the other ingredients I am used to. Despite that, the dish was still flavorful.
Le Local Fish Cakes
200g cooked white fish
100g mashed potatoes
2 onions, chopped
1 egg
1 tbsp Dijon mustard
1/2 cup parsley, chopped
2 tbsp sour cream
2 tbsp capers, chopped
2 tbsp chives
2 tbsp caviar (optional)
Olive oil
Salt and pepper to taste
Method
- Cook onion in olive oil until caramelized.
- Add fish, mashed potatoes, egg, mustard, chive and chopped parsley; season well wih salt and pepper.
- Form 5 cm patties, and bake in the oven at 450F for 10-12minutes or until golden brown.
- Mix capers and caviar into sour cream.
- Garnish the fish cakes with the sour cream mixture and serve.
