Tomatillo Pork Stew

It’s been a few days since I’ve posted. It has been a very busy week. I have a couple of webdesign projects going and have very little time to cook.

When things get hectic, I either make something really quick and easy or I make stew. Nothing like a dish that you can put on the stove and forget for a couple hours to free up some time spent cooking.

Most stews I’ve made were tomato based. Unfortunately, I had no tomatoes in the house. No fresh ones, no canned ones – zilch, nada. Being busy also meant I had not done groceries, so I had to improvise. I had a jar of tomatillo salsa in my larder so I decided to use that. I had a pork butt in the freezer so I defrosted that instead of running out to buy stew beef.

The final dish was a tangy, spicy stew that tasted amazing. I was pretty surprised by the results. I thought it was going to be pretty ordinary considering that I was just throwing stuff in the stew pot.

Tomatillo Pork Stew

1 onion, diced
1 kg pork butt, cubed
2 cloves garlic, minced
1 jar (500ml) tomatillo salsa
1/2 cup chicken broth
2 ribs celery, diced
1/4 cup lemon juice
2 tbsp calypso hot sauce
Salt and pepper to taste

Method
- Add all ingredients into a dutch oven. Bring to a boil over high heat.

- Bring flame down to low and gently simmer covered for 1 1/2 hour, stirring occasionally.

- Salt and pepper to taste. Serve hot.
